The former Bernie's Burger Bus space has swapped out its familiar yellow bus to make way for Aya Sushi, a highly anticipated Japanese restaurant that opened in the Bellaire Triangle in September. Some of the team behind Vietnamese favorite Kau Ba in Montrose partnered for this new restaurant, helmed by Tokyo-trained chef Yoshi Katsuyama, who has both Uchi and Soto cred. Expect nigiri, sashimi and Japanese-inspired ceviche crafted with fish sourced straight from Japan, plus a solid beverage list with wine, Japanese whisky and sake.
